Lobster and monkfish casserole (in two servings)
Our speciality: Half a blue Galician lobster per person. You eat the lobster, the monkfish and the potatoes. We take the dishback to the kitchen and add poached eggs to the remaining potatoes, and mix them with the juices from the fish. With bread from “Forn Vilamala”.

ROCK MUSSELS WITH CITRUS FRUIT

Delicious, tiny and thick… Sometimes, depending on the season, we get rock mussels, or Bouchot mussels, or Mont Saint-Michel mussels, because we always serve the best. 300 grams per person.The recipe is made of orange, lemon, onion, white wine and laurel. Fresh and light.

GUIJUELO HAM CROQUETTES

According to Max, the best ham croquettes in the world. One croquette per person.

A classic, with everything peeled to make it easy. With cuttlefish, clams, prawns and small mussels… Served in a paella dish.

CAÑETE
The favourite at Cañete, with baby squid, artichoke hearts, a little blackish, creamy and cooked al dente. Served in a casserole.

MARTÍNEZ
Our own Valencian dish, with rabbit, free-range chicken, baby home-grown vegetables and “garrafó” white beans. It can be eaten two ways: in a paella dish or in a casserole with broth baked in the oven. In the summer we make it in the paella dish and in winter in the casserole.
